The most delicious Almond Meal Cake
The perfect marriage of citrus and our native Aniseed Myrtle!
Wondering what to do with almond pulp left over from making almond milk? This cake is so easy and absolutely delicious.
Blend 4 Blood Oranges (including peel) with a cup of almond meal pulp, 250 gram coconut sugar, 5 gram Aniseed Myrtle, 1 teaspoon of baking powder and 6 eggs.
Pour into a prepared cake tin and bake at 180C for 40 minutes.
Serve with Mascarpone and Lemon Myrtle Syrup
Lemon Myrtle Syrup Recipe: Boil ½ cup sugar, ¼ cup water and 2 grams of lemon myrtle flakes for 2 minutes.
Aniseed Myrtle is a rainforest tree whose leaves, when dried, impart a subtle sweet liquorice flavour. My most favourite leaf to mill into powder, the aroma is astonishing.
